I can't mention enough number of times how hard we are trying to keep our food healthy. Losing the ''few'' extra pounds after Ariana was born wasn't as difficult, but the last few, are turning out to be more adamant than I expected. And it's just not fair to do it with giving up food, anyways through a pregnancy and after, you have to watch what you eat, its madness to have to follow that even after you have all the freedom to eat whatever you want. Dieting is madness. Dieting has always driven me crazy and made me crave for more fatty things. Instead, I prefer substituting all the fatty things with a healthier alternative and still feasting on whatever is for a meal.
Today being Mitul's football evening, he comes home very late, so today becomes my day of trying out new soups and breads.
When the only tomatoes you can buy are not particularly flavorsome, make this soup. The roasting compensates for an lack of flavor in the tomatoes and the soup has a wonderful smoky taste. A nice, thick filling soup. This is one of our most favorite soups! Not just tomato soup, but has more in it to excite your taste buds. Roasting the tomatoes in the oven gives them a gorgeous smoky flavor. Cooking the pasta entirely in the soup not just makes the soup nice and thick, but also gives it a nice full bodied taste (as compared to a regular tomato soup). And definitely, the basil leaves adds the hint of a nice herbal aroma to an already yummy soup! Tastes PERFECT with a nice buttered toast. It's so much easier to eat and digest light meals like a nice cold salad for any meal during the day, that I had to put this recipe up as soon as I remembered it. Halloumi is a very salty cheese, which originated in Cyprus and is made from goat milk, sheep milk, or a combination of both and even cow milk; used mainly in the Middle Eastern, Greek and Turkish cuisines. On every Tuesday, after work my husband has his football matches, which go on till about 10 in the night. We start our day early too, at around 5.30 and in spite of being Indians, we really don't like spicy food or masala food for dinners. That's why, every Tuesday is a soup night or a very light dinner night. Today, I have been really really craving for a lot of carbs, and what better than kidney beans, haricot beans and pasta to fulfill my carbs greed! This is one of my favorite soups, as its tomato based. Love its tangy wholesome taste! Delicious and a very filling. Who could do all that when you hardly had 10 hours between two flights to catch up on your rest, do your laundry and prepare for you next flight.
